Ingredients:
15 Athens mini fillo shells
1½ cup watermelon, chopped
¼ cup balsamic vinaigrette
3 tablespoons Feta cheese
15 fresh mint leaves
Instructions:
Bake fillo shells in the oven at 350 degrees for about 3 minutes. Remove from oven and cool. Combine watermelon and balsamic vinaigrette. Fill shells. Top with Feta and garnish with mint leaf.
Nothing says summer like sweet watermelon, spicy vinaigrette, salty Feta and fresh mint. Enjoy your summer!
