1 3/4 cups well chilled vanilla pudding
1/4 teaspoon imitation rum extract
2 (15 count) boxes Athen Mini Fillo Shells, thawed
30 mini cappuccino flavored meringue cookies
1/3 cup refrigerated chocolate flavor syrup
1 ½ tablespoons espresso powder
In a medium bowl, stir pudding and extract together. Fill fillo shells to top of shells with pudding. Invert filled shells onto small individual serving dishes. Spread about ¼ teaspoon of remaining pudding on each fillo shell bottom. Place a cookie on each. Drizzle each with chocolate syrup then dust lightly with espresso powder. Serve immediately. Makes 30.
