Ingredients:
2 Pkgs Athens Mini Fillo Shells (15 ct ea)
1/2 of a 3oz Pkg Lemon Flavored Gelatin Mix
1/2 Cup Boiling Water
4oz Cream Cheese - Softened
1/2 Cup Sugar
1 Tsp Vanilla Extract
1 Cup Frozen Whipped Topping - Thawed
1 Tbl Lemon Zest
1 Tsp Powdered Sugar
Instructions:
Place the Athens Mini Fillo Shells on a serving dish. Set aside
Dissolve lemon gelatin in boiling water. Place in refrigerator until thicken, but not set.
In a small bowl, combine the lemon zest and sugar. Stir to combine well. Set aside.
In a medium bowl, beat cream cheese, sugar and vanilla until smooth. Beat in the gelatin mixture. Fold in whipped topping. Spoon into Athens Mini Shells. Top with the lemon zest.
Chill in refrigerator until ready to serve.
