Ingredients:
2 packages (1.9 oz. each) Mini Fillo Shells
1 pound lean ground beef
1 package Taco mix
1/4 cup water
1/4 cup finely chopped onion
25-30 corn tortilla chips, crushed fine
1 cup all-purpose fry batter mix
1 cup complete pancake mix
1-1/2 cups beer
vegetable oil
Instructions:
Combine ground beef, taco mix and water in a food processor and process a few times until combined. Cook in frypan just until browned and remove to a bowl. Add onions and crushed tortilla chips. Place fillo shells on a baking sheet and fill each one with mixture. (You may have some mixture leftover.) Freeze filled shells on the baking sheet in freezer for about 5 minutes.
Heat oil in a large deep pot over medium-high heat to 375 degrees. While it is heating, mix fry batter, pancake mix and beer in a bowl for dipping.
Dip shells from freezer in batter, let excess drip off. Fry in heated oil in small batches stirring often until browned. Drain on paper towels.
Serve immediately or reheat in 300 degree oven and serve with ranch dressing and salsa.
