1-1/2 boxes Athens Mini Fillo Shells
2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 teaspoon vanilla extract
3/4 cup granulated sugar
4 ounces butterscotch chips, chopped a bit
3 tablespoons chopped walnuts - plus extra for garnish
Preheat oven to 300 degrees. Cover a cookie sheet with plain brown paper, as this is important for baking meringues.
Beat egg whites, salt, cream of tartar and vanilla until soft peaks form. Add sugar gradually, beating until peaks are stiff. Fold in butterscotch pieces and 3 tablespoons chopped nuts.
Place mini fillo shells on prepared baking sheet and fill each with a rounded teaspoonful of the mixture. Sprinkle with a few pieces of nuts on top.
Bake in preheated oven for about 17 minutes. Cool on paper on baking sheet.
