Ingredients:
2 ears fresh corn
1/4 cup diced red onion
2 TBS chipotle Mayo
1 TBS freshly chopped parsley or cilantro
15 mini fillo shells
Instructions:
Grill corn on the cob. Strip kernels from the cob. Mix in onion, chipotle mayo, and parley. Stir to combine. Spoon into fillo shells. Enjoy.
