Strawberries, sliced - 1 cup
Lemon juice , freshly squeezed - 1 tablespoon
Sugar - 3 tablespoons
Rum - 1 tablespoon
ATHENS MINI FILO SHELLS - 15 count
Heavy whipping cream - 1/2 cup
Lemon rind , thinly sliced - for garnish
Strawberry,thinly sliced - 4-5 , for garnish
Stir 1 cup sliced strawberries , lemon juice , sugar and rum together and keep covered in the refrigerator for 2 and up to 8 hours.
Bake ATHENS MINI FILO SHELLS according to package instructions and cool completely.
Strain the strawberry mixture and reserve the liquid and strawberries.
In the bowl of your electric mixer, or with a hand mixer, whip the cream until soft.
Slowly drizzle the reserved liquid and continue whipping until soft peaks form.
Spoon a few of the reserved strawberries slices in the bottom of each cup.Top with a dollop of the whipped cream and garnish with a thinly sliced lemon rind and a strawberry slice.
