Spinach Cups

Ingredients:

3 packages of Athens mini fillo shells
2 eggs, beaten
1 cup fancy shredded parmesean cheese
1 cup shredded mild cheddar cheese
4 slices cooked bacon, chopped
2 10-ounce package frozen chopped spinach, thawed & drained
6 tbsp Italian flavored bread crumbs
1/4 tsp salt

Instructions:

Preheat oven to 350 degrees. Mix together in a large bowl: eggs, cheeses, bacon bits. Add spinach, salt and 2 tablespoons of bread crumbs and mix together. Spoon mixture into mini fillo shells to fill each one. Sprinkle remaining bread crumbs evenly over the top of the filled "Spinach Cups." Bake for 15 minutes. Change oven temperature to low broil and leave in oven for 2-3 minutes until tops are lightly golden brown.
