Ingredients:
I package (15 ct.) Athens Phyllo Cups
1 jar of roasted red peppers
1 package (3ox) of goat cheese, softened
5 eggs
fresh rosemary
Instructions:
Toast the Phyllo cups per package instructions.
Chop the rosemary and combine with 5 whisked eggs
Scramble the eggs until just done in a pan over med high heat.
Fill each phyllo cup with a approx. a tablespoon of egg. Top with a teaspoon of softened goat cheese.
Remove red pepper from jaw and cut into thin strips.
Fashion each red pepper strip into a heart and place on top of a phyllo shell.
