15 small red skin potatoes,sliced in half
1 /3 cup Italian salad dressing, divided
1/3 cup goat cheese
2 packages Athens fillo cups
2 scallions ,finely chopped
Preheat oven to 450 degrees
Place potatoes in a gallon sized bag and add 1/4 cup of salad dressing. Reserve last tablespoon .
Shake bag until potatoes are covered and place on a baking sheet or casserole dish.
Bake until done - 10-12 minutes
While baking open fillo cups and place on a large platter. Put goat cheese in a small bowl , crumble and mix in the last tablespoon of dressing.
Put a potato in each cup , drizzle with cheese and sprinkle on scallions.
