Pumpkin Creme Brûlée Bites

Ingredients:

1/4 C Pumpkin Purée
1/4 C Sugar
1 Large Egg
2 Egg yolks
1/2 C Cream
1/4 C Milk
1/8 tsp Pumpkin pie spice
1/8 tsp Vanilla
Sugar
2 Packages Mini Fillo Shells

Instructions:

In bowl whisk together pumpkin puree, egg, yolks and sugar until well combined. Add cream, milk, pumpkin pie spice and vanilla and wisk to combine. Place shells on baking sheet and carefully spoon pumpkin mixture into shells, not over filling. Gently place baking sheet into 300*F reheated oven and bake 15 minutes, brulee should be just set. Let cool on counter and just before serving spoon enough sugar to just cover tops of each brûlée. Carefully using a kitchen torch go over the sugar until glossy and carmelized. Avoid excessively browning the shells edges.
