Mini Layered Greek Dip Bites

Ingredients:

15 Athens Mini Fillo Shells
5 T hummus
5 T sour cream
5 T small chopped tomato (seeds and excess juices removed)
2-3 T minced fresh mint plus 15 very small mint leaves or small cuttings from larger leaves
Dusting of All-purpose Greek Seasoing (such as Cavender's (approximately 1-1/2 t)
15 chick peas aka ceci bean

Instructions:

Remove the fillm from the shells package.
Layer the ingredients into each cup as follows:
1 t hummus, 1 t sour cream, 1 t chopped tomato, a pinch of the minced mint, a sprinkle of the seasoning. Top each with a garnish of 1 chick pea and a bit of mint leaf. Chill until ready to serve.

Notes:

May be prepared with Regular, Spinach or Tomato shells and/or low-fat hummus and sour cream. Also very good with any flavored hummus you enjoy. You may subtitute well-drained and minced water-packed canned beets for the tomatoes for an equally delicous bite.
