Mascarpone Puffs With Honey And Mint

Ingredients:

8 ounces mascarpone cheese
4 tablespoons honey
4 tablespoons agave
Zest of half an orange
Juice from half the orange
Non stick spray
5 Sheets refrigerated Athens fillo dough (9" x 14"), cut in fourths
1 tablespoon flour
6 ounce package of raspberries
3 tablespoons agave for garnish
Several sprigs of mint for garnish

Instructions:

Prepare oven to 350 degrees. Have ungreased cookie sheet prepared.

Mix the first 5 ingredients in a bowl.

Remove the Athens fillo dough from the refrigerator and carefully unroll 5 sheets onto one piece of the parchment paper. Immediately place left over fillo back in the refrigerator for future use. With slightly wet fingers lift the edge of four sheets of fillo dough and move them to the floured parchment paper. Spray each sheet with non stick cooking spray. Cut the sheets into fourths and roll each one in a triangular fashion. Once the end is reached, spray again and place on cookie sheet at least 1" apart. Repeat this process until all of the fillo is rolled. Spray once more and bake 12 - 15 minutes until golden brown.

Notes:

This is crunchy and yummy for a midnight snack!
