Ingredients:
½ cup chicken, cooked, chopped
2 Tablespoons Vanilla Greek Yogurt
¼ cup dried cranberries
¼ cup mandarin oranges, drained
15 bite size pieces Brie
15 Athens mini shells
Instructions:
Combine chicken , yogurt and cranberries. Place 2 orange pieces and piece Brie in each shell. Top with chicken mixture. Refrigerate until ready to serve.
Notes:
These healthy little snacks are great for a party. The chicken can be made ahead of time and refrigerated. You could also add almonds for a fun little crunch. If you don't have Greek yogurt, regular low fat yogurt will work.
