Lemon curd phyllo baskets

Ingredients:

Athens Mini Fillo Shells
1 cup sugar
3 large eggs
1 egg yolk
½ cup butter
6 TBS fresh lemon juices
2TBS lemon rind grated
Strawberries

Instructions:

Preheat oven to 350
Bake cups in muffin tin until slightly brown 5-10 min remove and cool.
Whisk sugar, eggs, butter, lemon juice and peel over low heat until butter is melted cook until mixture thickens to consistency of light whipped cream. Pour into bowl. Place a piece of plastic wrap directly on surface of curd and refrigerate until cold. Spoon berries into bottom of basket and sprinkle lightly with sugar top with curd.
