Ingredients:
15 Athens mini fillo shells
3 large eggs
¼ cup deli corned beef, finely diced
½ cup frozen hash browns, thawed
1 Tablespoon thyme
Instructions:
Brown hash browns in non-stick skillet over medium heat. Add corned beef and reduce to low. Lightly beat eggs and add to skillet. Cook over low heat until eggs are cooked. Fill shells and top with thyme leaves.
