15 Athens fillo shells
¼ cup heirloom tomatoes, chopped
½ cup watermelon, chopped or balled
2 Tablespoons honey
1 Tablespoon balsamic vinaigrette
2 Tablespoon crumbled Feta cheese
15 mint leaves
Place 2 or 3 watermelon pieces and 2 or 3 tomato pieces in each cup. In a small bowl combine honey and balsamic dressing. Drizzle dressing on top of watermelon and tomato pieces and sprinkle with Feta. Garnish with mint and enjoy! A great refreshing summer treat.
