1 (15 oz.) can cut sweet potatoes, well drained
1/4 cup brown sugar
1/8 teaspoon cinnamon
1/2 cup vanilla pudding
2 (15 count) boxes Athen Mini Phyllo Shells, thawed
In a large bowl, toss sweet potatoes with brown sugar. Sprinkle with cinnamon. Heat a gas grill to medium high heat. Grill potatoes on a grill pan for 12-15 minutes, until sweet potatoes brown, turning often. Remove from grill and cool. To assemble, place about 1 teaspoon of pudding in each phyllo shell. Cut sweet potato chunks to fit into shells. Add one sweet potato chunk to each shell. Serve immediately. Makes 30.
