Ingredients:
½ cup peach yogurt
¼ teaspoon grated ginger
1 cup whipped topping
½ cup peaches, chopped
15 Athen mini fillo shells
Instructions:
Bake shells at 350 degrees for 5 minutes. Remove from oven and cool. Combine yogurt and grated ginger. Fold in ½ cup whipped topping. Fill shell ½ full with yogurt mixture and top with fresh peaches. Garnish with remaining whipped topping. Refrigerate until ready to serve.
These cool summer treats will be a hit at your next gathering. The fresh ginger and sweet peaches are a great combination adults and children will love. Ground ginger can be substituted for the fresh ginger.
