15 Athens mini fillo shells
¾ cup Greek yogurt, plain
4 peaches, thinly sliced
¼ cup ginger preserves
3 tablespoons chopped pistachios
Bake fillo shells at 350 degrees for 5 minutes. Place yogurt in bottom of shells. Top yogurt with ginger preserves and place 2 or 3 slices of peach in shell. Sprinkle pistachios on top. Serve chilled.
Ginger Preserves are available in most grocery stores and add a spicy sweet twist to the fresh peaches. Great for summertime or anytime you want to add a fun new twist to any fruit.
