Ingredients:
1.9 oz. box Athens Mini Fillo Shells, thawed
4 slices bacon, cut into 1/2-inch pieces
1/2 pound ground chuck
1 green onion, chopped
4 oz. sharp cheddar cheese, shredded, divided
Instructions:
Preheat oven to 350 degrees. Arrange fillo shells onto a large baking sheet; set aside.
Heat a large skillet over medium heat. Add bacon and cook until crisp, approximately 4 - 5 minutes. Remove bacon from skillet, set aside. Remove all but 1 tablespoon bacon drippings from skillet and discard.
Place skillet with bacon drippings back over medium heat. Add in the ground chuck and cook until cooked through and no longer pink, being sure to break up into small pieces as it cooks, approximately 4 - 5 minutes. Drain well, transfer ground chuck to a medium bowl.
To the ground chuck, add in the green onion and 3 oz. of the cheddar cheese, mix to fully combine. Fill the reserved fillo shells evenly with beef mixture, top evenly with the remaining 1 oz. of cheddar cheese and then the bacon. Place filled shells into preheated oven and bake for 5 - 7 minutes, until heated through.
