Ingredients:
2 Large Avacados
1 Pkg Athens Mini Fillo Shells
8 oz of cream cheese
1 tbsp of pickled jalapenos
1 tbsp of lemon juice
Salt and Pepper to taste
1 can of sweet corn kernels
Instructions:
For the Mini Fillo Shells:
Put them in a sheet pan non stick ofcourse or you can use a non stick spray, put them in the oven at 300 degrees for 10-12 minutes and they have a golden color. When done set aside so they can cool down.
For the Avacado Mixture:
Let the cream cheese soften at room temperature when you first buy it or you can put it in the microwave till its nice and soft to work with but not too melty. Once you have that mix the avacados, pickled jalapenos, lemon juice and mix it all together, you can use a whisk and just mix it all very well, once you have mix it add a little salt and pepper to taste. If you want to add more jalapenos or lemon juice you can.
To Assemble:
You can use a ziploc bag and put the avacado mixture in it to make a piping bag to make it easier to put in the mini shells cut the end of the ziploc bag to pipe the mixture in , once all your mini shells have been filled you can topped each one with corn kernels as desired and enjoy.
