Crispy Fillo Graduation Caps

Ingredients:

6 shells from a 1.9 ounce package Athens Mini Fillo Shells, already thawed for 10 minutes
6 square-shaped shortbread cookies
2 individual fruit rolls (for tassels)
2 ounces white chocolate, melted

Instructions:

Make the tassels: Unroll the fruit rolls and remove the paper. Cut into 3 long strips. Roll the strips horizontally into a tight roll-shape. Trim to a 3 inch length. Cut 4 slits on an end to resemble a tassel.

In a medium microwave-safe bowl, melt the white chocolate for 40 seconds. Stir.

Invert the mini fillo shells on a plate. Place 1/2 teaspoon of the melted white chocolate on the shell bottom. Place the shortbread cookie on top. Repeat for the remaining 5 shells.

Place 1/4 teaspoon of white chocolate in the center of the cookie. Put the uncut end of the fruit roll tassel in the white chocolate. Repeat for the remaining 5 fillo graduation caps.

Now that all preparation is complete, allow the white chocolate to harden prior to serving.
