2 15 count packages Athens Mini Phyllo Shells
3 slices bacon, chopped in 1/4 inch pieces
1/2 cup finely minced onion
1 large egg, lightly beaten
1/2 cup dairy sour cream
1/2 teaspoon salt
1/4 teaspoon dried thyme leaves
1 tablespoon finely minced flat leaf parsley
Preheat oven to 375 degrees. Place phyllo shells on a rimmed baking sheet.
In a small saucepan cook bacon over medium heat for 3 minutes. Add onion and cook an additional 2 minutes. Remove with a slotted spoon to a small bowl.
In another small bowl combine sour cream, egg, salt, thyme and parsley.
Place one measured teaspoon of onion filling in each shell. top with one measured teaspoon of sour cream mixture.
Bake for 10 minutes.
Equally delicious warm or room temperature.
