1 cup chopped Cooked chicken breast
2 TBSP Hellmans mayonaise
1 TSP Lemon zest
1/4 cup chpped Fresh green grapes
1/4 cup chooped slivered almonds
1/2 TSP tarragon
1/4 cup toasted seasoned breadcronbs
1 package Mini filo CUPS
Total Time 30 minutes
Cook boneless chicken breast 20 minutes at 325. Let chicken cool, chop into small cubes, place in bowl, add mayonaise, tarragon, grapes, almonds, mix well and fill fillo cups to top. Arrange on platter.
In a pan, Mix breadcrumbs, lemon zest and tarragon, now heat breadcrumb mixture ON LOW HEAT for 1 minute in saute pan coated with olive oil. Set aside till cool.
Sprinkle cups with cooled breadcrumb mixture and serve.
Fill fillo cups to the top with chicken mixture.
Sprinkle breadcrumb mixture on tops of filled fillo cups and serve.
