1.9 oz. box Athens Mini Fillo Shells, thawed
1/2 cup plus 1 tablespoon mascarpone
1 (3.25 ounce) cup chocolate pudding (such as Snack Pack), chilled
2 tablespoons plus 2 teaspoons toffee chips, divided
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees. Place fillo shells onto a large baking sheet. Place in preheated oven and bake for 3 - 5 minutes, for added crispness. Cool completely.
Meanwhile, in a medium bowl, place the mascarpone and chocolate pudding, mix to combine. Add in 2 tablespoons toffee chips and the mini chocolate chips, mix to fully combine. Fill shells evenly with chocolate mixture. Sprinkle with remaining 2 teaspoons toffee chips.
