2 Boxes (15 per box) Athens Mini Filo Shells
1 ½ cups Ricotta Cheese (Drained)
½ Cup Confectioners' sugar
6 ounces mini semisweet chocolate chips (divided)
2 ¼ Tablespoons Sweet Ground Chocolate
2 ½ Teaspoons Amaretto
Melt 4 ounces of the mini chocolate chips in the microwave in a microsafe bowl for 1 1/2 minutes or until melted.
Dip each Mini filo shell (upside down) in the chocolate so each filo shell has a chocolate rim around the top.
Mix together in a food processor: Ricotta cheese, confectioners' sugar, sweet ground chocolate, & Amaretto.
Using a pastry bag, fill each filo shell with the filling.
Top each canolli treat with some of the remaining mini chocolate chips.
Refrigerate until serving
