Blueberry Glazed Dessert Cups

Ingredients:

1/2 cup apple jelly
1-1/2 cups fresh blueberries
15 Athens Mini Fillo Shells
1/2 cup lemon curd
1/2 cup mascarpone cheese

Instructions:

In a 2 quart saucepan, melt jelly over low heat. Add 1 cup blueberries and cook over medium heat until berries soften, about 2 minutes. Remove pan from heat and stir in 1/2 cup blueberries.
To assemble: in each fillo shell layer 1 teaspoon lemon curd, 1 teaspoon mascarpone cheese and 1 tablespoon of the berries mixture. Arrange on platter and chill until ready to serve. Makes 15.
