Sugar 1/4 cup for nests and 1 cup for filling
Ground cinnamon 1 teaspoon for nest and 1 teaspoon for filling.
Butter melted 1/2 cup
Athens Kataifi Shredded Fillo 16 oz.
Ricotta cheese 4 cups
Thaw the Kataifi shredded fillo according to package instructions
preheat the oven to 400 degrees prepare two 12 cup muffin pans by lightly greasing with oil
For the nests, in a small bowl, combine the melted butter, sugar and cinnamon. pull the karaifi strands apart gently to separate any clumps. drizzle the melted butter mixture over the kataifi and gently toss with your hands to coat strand evenly.
divide the kataifi mixture evenly among the 24 muffin cups. gently press the kataifi and shape it with your hands to look like little nests, completely lining the bottom and sides.
bake the nests till it turns golden brown colour, 15-20 minutes. let the nests cool for 10 minutes.
Beat ricotta cheese with sugar and cinnamon.Fill this mixture in a piping bag, fitted with star shaped nozzel. Place nests in a plate and pipe this mixture into nests. Refrigerate until ready to serve.
