Ingredients:
1 (12 ounce) package semisweet chocolate chips
1 (14 ounce) package soft tofu, drained
4 tsps Baileys Irish Cream
mint leaves for shamrock garnish
15 Athens Mini Fillo Shells
Instructions:
1. Melt chocolate chips in a microwave-safe bowl.
2. In a food processor, combine tofu, melted chocolate and Baileys. Process until the mixture is smooth.
3. Chill for approximately one hour.
4. Spoon into Athens mini fillo shells and garnish with mint leaves.
No one will ever guess this luscious dessert is packed with protein and calcium! This mousse can be made vegan by substituting peppermint schnapps for the Baileys. A healthful treat for those with food allergies.
