About 12 apples - peeled and sliced
½ cup sugar
6 tablespoons butter
½ cup raisins
Juice of ½ lemon
Rind of ½ lemon
½ tsp. nutmeg
12 graham crackers
1 tsp. vanilla
¼ cup brown sugar
Place sliced apples, 3 tablespoons butter, raisins, lemon juice, lemon rind, cinnamon, nutmeg and sugar in a large frying pan and heat until the butter is melted and the apples are warm and slightly soft. About 5 minutes. Then remove from the heat and set aside.
In a food processor place the graham crackers, vanilla and brown sugar and grind until smooth.
Preheat Oven 350 degrees:
Melt the rest of the butter for in-between the phyllo.
Grease two 8 x 8 baking dishes and begin layering the phyllo. One sheet of phyllo then sprinkle the graham cracker crumbs with the nuts on the phyllo. Repeat this process for about 4 - 6 sheets. Place just about half of the apple mixture and then repeat the process of layering the phyllo. Repeat this process with the other pan.
This is a delicious dessert served with vanilla ice cream or whip cream on top. Go ahead and enjoy. (I did).
