Ingredients 1 Skinless Boneless Chicken Breast Italian Dressing 1 Ear Sweet White Corn on the Cobb 1/2 can Black Beans 1 Jar Medium Mango Salsa 30 Mini Fillo Shells
Instructions Ingredients 30 Mini Fillo Shells 1 Ear Sweet White Corn on the Cobb 1 Skinless Boneless Chicken Breast 1/2 can Black Beans 1 Jar Medium Mango Salsa Italian Dressing
Instructions Marinate chicken breast in italian dressing for 2 hours or overnight. Preheat Oven or toaster oven to 350 degrees. Baste corn on the cobb with italian dressing. Grill corn and chicken breast. Drain black beans. Place 1/2 of the black beans in a mixing bowl and smash. Cut corn off of the cobb. Add corn and 2 TBS mango salsa to the black bean mixture and stir. Place 1 tsp of corn mixture in each shell. Dice chicken and place 3 -4 pieces in each shell and bake at 350 degrees for 8 minutes. Top with 1 tsp of mango salsa and serve.
