Monthly Fillo Recipe Madness Contest Month: July Required Ingredient: corn Monthly Theme: grilling
Ingredients 1½ cups grilled chicken, diced or shredded ¼ cup Franks Hot Wing Sauce 1 cup corn, grilled 4oz cream cheese, softened ¼ cup Bleu cheese dressing 1/3 cup pineapple, grilled, diced ¼ cup green onion, diced ¼ cup red pepper, diced 10 sheets Athens filo dough, thawed 3 tablespoons butter, melted
Instructions 1) Grill chicken. Dice 1½ cups of the cooked chicken and mix with hot sauce. 2) Grill corn and remove from ears to make 1 cup. 3) Grill pineapple and cut into bite size pieces. 4) In a small bowl combine bleu cheese dressing and cream cheese. 5) Layer filo in 9x13 casserole dish. Brush with butter between layers until you have 10 layers. Spread cream cheese mixture on top of filo layers. Top with chicken, corn and pineapple. Bake at 350 for 30 minutes. Remove from oven and top with peppers and onions. Cut into squares and garnish with additional dressing if desired.

Notes I used Franks hot sauce but you can use any you prefer. Ranch dressing can be substituted for the Bleu cheese dressing.
