Monthly Fillo Recipe Madness Contest Month: July Required Ingredient: corn Monthly Theme: grilling
Ingredients 1) 15 each(.75#) Sea Scallops, small 2) 1/2 cup Corn, leftover fresh corn, can or frozen 3) 1 T cilantro, fresh, minced 1 T Chives, fresh, minced 2 ts Old Bay Seasoning 2 T Lime Juice, fresh 3 T olive Oil Salt and Pepper 2 T Butter 4) 15 each Athens Mini Fillo Cups 5) 1 each Red Bell Pepper
Instructions 1) With 3 wooden skewers, put 5 scallops on each skewer and place on plate. Pour the oil and lime over the scallops, now shake on the old bay. Turn over and over until the scallops are well coated. Take them to your hot grill and cook, 5 minutes on each side. **** I'm using a gas grill with with 2 cooking sides, the left side is on high heat and the right is off. 2) Cut the red pepper in half and dip in the oil mixture from the scallops, put that on the hot side and cook. 3) Remove the fillo cups from their box and place on a small metal sheet pan then put them on the (off) side of the grill to warm up. 4) While the grilling is going on prep the corn, if it is on the cobb cut it off and place in a small saute pan, otherwise open a can and drain it. Cut up the herbs and put in with the corn add the butter and season to taste with salt & pepper. 5) With the scallops almost ready make room for the pan of corn and heat. 6) Place the cups on small platter, fill the cups just under half full, pull the scallops off one by one & put one on top on the corn ( be very gentle #. 7) Diced the pepper and garnish each scallop #see picture). 8) Serve while still warm.
