Spicy Corn on a Stick with Avocado Aioli


Winner - July - Creative Fillo Dough

Monthly Fillo Recipe Madness
Contest Month: July
Required Ingredient: corn
Monthly Theme: grilling

Ingredients
1-15oz can baby corn, drained
¼ cup yogurt, plain
½ teaspoon lime juice, divided
1 teaspoon chili powder
1 Tablespoon Santa Fe grill seasoning (or any spicy seasoning mix)
2 Tablespoons salsa
¼ cup avocado, mashed
¼ cup mayonnaise
15 sheets Athens Fillo dough, thawed
¼ cup butter, melted

Instructions
Soak 15 wooden skewers in cold water.
1) Grill baby corn on vegetable grill or in vegetable grilling pan for 1 minute. Remove from grill and press dry.
2)Combine yogurt and lime juice. Soak corn in yogurt mixture.
3) In another bowl combine chili powder and seasoning.
4)Combine salsa, avocado, mayonnaise and ¼ teaspoon lime juice. Refrigerate.
5)Unroll fillo and brush with melted butter. Fold in half horizontally. Brush top with butter. Remove corn from yogurt mixture allowing most of yogurt to fall off. Insert skewer stick into bottom of each piece of corn. Roll corn in spice mixture and place on folded edge of fillo about ½ inch from edge. Fold fillo over corn tucking top excess over as you roll. Brush with butter after each roll. Place corn skewers on baking sheet and bake 15 to 20 minutes at 350 degrees or until fillo is golden brown. Serve with chilled Avocado Aioli.

Notes
This recipe also works with regular corn. Cook the corn on the grill 3 to 4 minutes and double the amount of Fillo sheets. Use two sheet and brush with butter between sheets. (You will not need to fold sheets in half) To make this recipe kid-friendly just replace seasoning mix with non-spicy mix or taco seasoning.
