 Post subject: GRADUATION DIPLOMAS

With graduation just around the corner, these Graduation Diploma cookies with a fortune inside are a perfect treat at your party!

** A 9" X 14" sheet of Fillo cut into 4-1/2" X 4-1/2" squares will make 6 squares. Rounding the 4 corners will give you a rounded "diploma" circle.

8 sheets Athens Fillo (Phyllo) dough, 9"X14", thawed (This amount will make 24 diplomas, double thickness.)
cooking spray
cinnamon sugar
Decoration ingredients:
Narrow ribbon in school colors tied around middle.

1. Preheat oven to 425 degrees.

2. Cut three 12" X 12" pieces of heavy-duty foil. Cut in half each way to give you 4 squares. Cut the four squares for each piece, 12 total squares. Shape each square into a loosely rolled spool. (I clip one end with a paper clip to hold.) Set aside while preparing fillo circles.

3. Place 1 sheet of Fillo on a flat work surface, keeping other sheets covered to prevent drying out. Spray with cooking spray and sprinkle generously with cinnamon sugar. Repeat with 1 more sheet of Fillo and cut this piece in ** 4-1/2" X 4-1/2" pieces as mentioned above and carefully wrap around each foil spool. Spray again with cooking spray . Repeat entire procedure keeping finished spools covered with plastic wrap to prevent drying until all shells are made.

5. Place covered spools on an ungreased baking sheet and bake at 425 degrees for 4 minutes, or until lightly browned. Immediately remove from foil to a wire rack to cool. Use spools for remaining 12 "diplomas".


NOTE--- To finish these "diplomas", you can go to http://www.chinese-fortune-cookie.com and find many ideas for sayings you can use for inside. They can also be printed and cut out for folding and stuffing inside! Decorate with a narrow ribbon in school colors.
